Date syrup isn’t new: It’s been around for centuries and is woven deep into Middle Eastern/ North-East African cuisine. It is a thick, dark caramel-coloured sweetener made from dates. The dates are soaked in water, boiled, simmered, and softened. Afterwards, they press and squeeze the softened dates (with a cheesecloth) to extract the liquid thereof. This liquid is further heated and cooked until it becomes thick (like honey).
WHY DATE SYRUP? It does not raise blood sugar levels as much and as fast as refined sugar because it sits at a cool 47 on the glycemic index (a measure of the effect of different foods on blood sugar) compared to the 68–70 of refined sugar. A tablespoon of date syrup contains more than twice the potassium, calcium, and magnesium levels of maple syrup or honey and 10 times the antioxidants. Refined sugar has none of that. Furthermore, dates are an excellent source of fibre and iron which help bowel movements, relieve constipation, and boost energy.
